This is a bit of a spin-off of a recipe that my mother-in-law gave me from allrecipes.com. I added peas, cut out the onions, and use sharp white cheddar cheese. Super A didn’t like the potatoes particularly, but he ate up the peas!
Ham and Cheese Potato Gratin (3-4 servings as a main dish)
3-4 peeled and thinly sliced russet potatoes
1/4 pound sliced ham cut in cubes
1/2 cup frozen sweet peas
3 tbs butter
1/2 cup half and half
3 tbs cream cheese
2 cloves garlic
1/2 tsp rosemary
1-2 cups shredded sharp white cheddar cheese
salt and pepper
Preheat oven to 350 degrees. Butter a 9×9 square baking dish and place sliced potatoes in the bottom. Cover with 1/4 cup half and half. Add in ham and peas. In a medium skillet on medium-low heat cook butter and garlic for 5 minutes. Then add 1/4 cup half and half and cream cheese. Cook until these are melted, then add in 1 cup shredded cheese and melt. Add in rosemary, salt and pepper (to your preference). Pour skillet mixture over potatoes, ham, and peas in baking dish and mix carefully. Top with remaining cheese and cook for one hour.
