This is a terrific recipe that I got from my sister, easy for a week night meal, and you can freeze the leftovers to reheat for a second meal! Plus all you need is a big cookie scoop and they are easily made in the oven.
Ingredients
2 lbs of ground turkey (we did one package of lean and one of extra lean)
1 diced red pepper
1 cup of ground oats
2 eggs (or three egg whites)
1 small diced yellow onion (I left this out because B is allergic)
Couple of shakes of worcestshire sauce (about 2 tsp)
1/2 tsp dried parsley
1/2 tsp dried oregano
Dash of salt and pepper
Directions
Preheat oven to 375 degrees. Spray a 12 cup muffin tin with canola oil. Mix all ingredients until it is well blended, but not over mixed (you don’t want it to become dense). Using a large cookie scoop, put a rounded portion into each tin. Cook for 30 minutes or until it reaches a temp of 165 degrees in the center.
