We’ve started a tradition of Friday night take-out, and then Saturday & Sunday night we trade off who makes dinner. This week was my turn, and I picked turkey meatball subs and roasted potatoes. They were a hit! Simple, and clean-up was fairly easy!
Turkey meatball subs
- 1 lb ground turkey
- 1 tsp Italian seasoning
- 1/4 tsp black pepper
- 1/2 tsp kosher salt
- 1/3 cup bread crumbs
- 1 large egg
- Jar of marinara sauce
- Sub rolls (I got wheat)
- Shredded mozzarella
Directions
- Preheat oven to 400 degrees.
- Line a cookie sheet with nonstick foil.
- Combine turkey meat, spices, bread crumb, and egg in a bowl.
- Roll meat mix into slightly larger than tablespoon size balls (I used a cookie scoop), and place on lined pan,
- Bake in oven for 15 minutes until well done.
- While meatballs are cooking heat marinara sauce in medium sauce pan over low-medium heat.
- Once meatballs are done, remove from pan and place in heated sauce.
- Slice sub rolls in half and press interior of bread down some (this helps to stop the meatballs from rolling out). Place desired amount of meatballs with sauce in sub and top with cheese.
Roasted potatoes
- 1 bag small yellow potatoes, quartered
- 2 tbs olive oil
- 1 tsp dried Rosemary chopped (in summer I use fresh and double the amount)
- 1 tsp dried thyme chopped (in summer I use fresh and double the amount)
- 1-2 cloves garlic, diced
Directions
- Preheat oven to 400 degrees.
- Line a pan with nonstick foil.
- Combine all ingredients in a bowl.
- Place ingredients on foil lined pan.
- Bake in oven for 20-25 minutes until done.*
*If cooking as a side for subs, prep potatoes first, then place and oven for 10-15 minutes before meatballs.*
