Thai Chicken Flatbread Pizza

Flatbread thai chicken pizzaI made these for lunch on Sunday. They were simple, quick, and really tasty! B was a bit unsure, but I won him over with the barbecue sauce. I had leftover roasted chicken breasts, so I got them together in less than fifteen minutes.

Ingredients (Serves 2…one flatbread per person)

Two small flatbreads (I used the Stonefire naan from Target and they were great)

Two cooked chicken breasts chopped

Thai sweet chili sauce

Sweet and spicy barbecue sauce (I used Target Market Pantry brand)

1 cup of mozzarella cheese

1/2 cup Matchstick carrots

6 quartered cherry tomatoes

2 diced green onions

2 tbs chopped cilantro

Directions:

Preheat oven to 450 degrees.

Spread about 1-2 tbs of the chili sauce on the flatbread. Top with the chicken, mozzarella, and drizzle with barbecue sauce. Bake for 5-7 minutes (I baked them on a pizza stone, but you could also use a cookie sheet). Top with remaining ingredients, dividing them among the two flatbreads.
