Tex-Mex Rice Bowls

Mexican Rice BowlsI love it when B comes up with a new dinner idea. This past week he made Tex-Mex chicken and rice bowls. It was quick, easy, and delicious.

Ingredients

1 cup of cooked rice

1 lb diced chicken breast tossed in taco seasoning

Salsa

Shredded cheese

Sliced avocado

Can of black beans (rinsed and drained)

Can of diced tomatoes (drained)

Taco Seasoning

1 tsp. chili powder

1 tsp. paprika

½ tsp cumin

Shake of garlic

Shake of cayenne pepper

Canola oil

Directions

Cook chicken in a skillet in 1 tbs of canola oil over medium heat. If you haven’t prepared your rice yet, get that prepared while you are cooking the chicken. Then simply layer all the toppings and ingredients! Easy! Yum!
