Pork brunswick stewI have to share this recipe because it is sooo good and was made from leftovers! From the freezer! I had leftover tortilla soup in the freezer the other night, and I’m not going to lie, I thought it was chili. I started prepping it and realized it was tortilla soup. Which is tasty, but the boys were expecting chili….which means they were expecting meat. Searching through the freezer again I found ziplocs of B’s left-over smoked pork and hence our new meal was created. We topped it with just a bit of cheese and sour cream and homemade rolls because we were a bit iced in and it was perfection. The smokiness of the pork balances out the spicy soup and thickens it into a great take on a brunswick stew. Happy leftover creating!
