Making use of our chocolate mint…

Chocolate mint ice creamIt was a long drive back! After a week visiting B’s parents, many city trips (filled with many meltdowns by A), and a few shopping excursions (IKEA!, The Container Store!); we are back and slowly getting into our summer routine. This week is filled with swimming lessons, unpacking, and getting the boys back on track. It’s Monday and I’m already tired. HA!

Our first task at hand was to make use of the overflowing chocolate mint on our back porch. After the boys helped me pluck the mint leaves, we now have ice cream cooling in the fridge to make later. I’ll let you know how the recipe turns out!
