I posted this meal on my Friday Favorites list a couple of weeks ago and it quickly became one of my new favorite meals. It is ridiculously simple, and with a few minor adjustments it is even easier than the original recipe. I diced up the chicken before cooking it (so it cut the cooking time in half) and added in a box of baby spinach to beef up the nutrition. I also whipped up a batch of biscuits which were perfect for getting all that extra sauce. The boys surprised me by eating up all of their portions, which means we’ll definitely be making it again!
