Cheesy Bread

This is what I call a method recipe. It’s not really a recipe, just more of a method, that you can interchange whatever you want to create what you want. My Mom has been making this as long as I can remember and she usually serves it alongside chicken noodle soup. One of the things I love is this is a great put together dish to take to someone who just had a baby, or is just looking for a free meal…I kid, I kid, hahahaha. But seriously, it’s great and easy.

Cheesy Bread


1 package of hoagie rolls (I like the Cobblestone Mill brand), and figure one hoagie roll (at least) per person.

Sliced mozzarella and provolone cheese (small slices from a block)

Four tablespoons melted butter (or more the more rolls you have)

Minced garlic (optional)


Preheat the oven to 350 degrees.

Slice about five horizontal cuts in each hoagie roll and then place a piece of cheese in between like so:

I place them in a foil lined glass pan.

Then brush the tops of the roll with melted butter and sprinkle on minced garlic (fresh or jarred) like so:


As you can see in the picture there is only garlic on mine. My boys do not care for garlic in this form, but I love it!

Then place them in the oven and bake for about 7 minutes until the butter and cheese is melted and the tops are slightly golden:

And then serve up with a salad and chicken noodle soup!


Yummy. Especially dipped in the soup. IMG_4159If you are wondering what type of chicken noodle soup here is my basic recipe:

Chicken Noodle Soup


Two cooked chicken breasts, chopped (I roast mine with olive oil, salt and pepper in the oven for 20 minutes on 350 degrees)

1 -2 cups of chicken broth

2 celery stalks chopped

2 carrots peeled and chopped

1/2 yellow onion, diced

2 cloves of chopped garlic

1-2 cups of wide egg noodles

1 tsp of cumin

1/2 tsp of curry powder

bay leaf

salt and pepper


Heat 1 tbs of canola oil on medium heat in a soup pot. Combine vegetables (except garlic) in the pot and saute for ten minutes. Add garlic, spices, and cook for an additional one minute stirring so the garlic doesn’t burn. Add chicken broth and bay leaf and cook for an fifteen to twenty minutes. Then add noodles and cook for time on package, then add chicken. Serve warm with cheesy bread!
