1, 2, 3 Chicken Parmesan

Chicken Parmesan is one of those recipes that sounds really difficult, but it’s really easy (just time consuming). All you need is flour, an egg, bread crumbs, and chicken (you’ll also need to pick up marinara sauce and angel hair pasta…or you could go light and serve it over a fresh mixed green salad).

First, either buy chicken cutlets (thinner chicken slices) or put the chicken breasts in a plastic bag and pound with a rolling pin until they are uniform in thickness.

Then, dip the chicken in 1. flour, 2. whisked egg, 3. breadcrumbs (you can get Italian style, or I get panko bread crumbs and mix with salt, pepper, and Italian seasoning):

Chicken ParmesanThen you fry the chicken in a pan heated to medium-high heat with a tablespoon of olive oil (three minutes per side):

Chicken ParmesanAnd then transfer to a baking sheet (cover the sheet with non stick foil for ease of cleaning):

Chicken ParmesanI zested a lemon over the top of each chicken breast and then baked them until done (165 plus degrees) at 350 degrees (about 15-20 minutes). In the last five minutes of cooking grate some fresh Parmesan over the top and let it melt.

Serve with hot marinara sauce and freshly cooked angel hair pasta (I cook these while the chicken is baking). Yum!
